Spinach belongs to the Chenopodiaceae family and is useful for the health of the gut, muscles, heart and eyes. Spinach contains iron, but the conviction that it provides the body with an especially large amount is wrong. To help assimilate this mineral it is advisable to eat spinach dressed with lemon; the vitamin C contained in citrus fruit helps with the assimilation of iron. Spinach is also rich in vitamin A and folic acid.
